Organic Yellow Mountain Green Tea (Huang Shan Mao Feng)

One of the Ten Famous Teas of China Mao Feng tea has been cultivated in the Yellow Mountains (Huang Shan) of Anhui Province for over three centuries. Yellow Mountain green tea is considered one of the best of China's green teas due to the high quality harvesting of the tea (only the top bud and first leaf) and its unique processing steps. Mao Feng is a gentle tea with a hint of nutty sweet flavor.

Wherever possible, we try and simplify the tea drinking experience. While ceremony has it's place, it sometimes can make exploring whole leaf teas seem too complicated and get in the way of just enjoying the tea. Nonetheless, there are special teas that deserve a few extra moments of care and preparation to be fully appreciated. Our organic Yellow Mountain tea is one of those teas. Allow yourself the time to experience multiple infusions of this tea in smaller cups as the taste will change from one infusion to the next.

The first infusion will be light - pale in color, body, and mouth-feel, giving up their flavor, though the liquor was totally delicious. The aroma of Mao Feng tea is a marriage of vegetal notes (delicate snap peas) and a sweet, lingering, floral character. The infusions that follow improve and enhance the unique Mao Feng flavor--2nd and 3rd steepings bring a sweetness, fuller body, a slight astringency. By the 4th and 5th infusions, the vegetal notes taper, leaving the tea somewhat lighter but sweeter than ever. A magical tea drinking experience from the mist covered mountains to your tea cup thousands of miles away on the other side of the world.

How to Prepare Organic Mao Feng (Yellow Mountain) Green Tea -

Heat water (filtered, if possible) to a low boil and let cool to 175 degrees, add one rounded teaspoon of loose leaf tea per cup (apprx. 8 ounces). Infuse the tea for less than one minute for the first infusion. Continue infusing the tea for slightly longer periods in subsequent infusions, up to 4-5 times.
