Organic Premium Sencha Japanese Green Tea

Sencha tea is made from the first tea harvests of the spring and embody the flavors of spring green leaves and grasses and sea breezes. Sencha is the most dearly loved tea of Japan and the processing of the leaves is both an art and a science in order to preserve the fresh green character and healthy components of tea leaves.

Our Sencha is organically cultivated in Kagoshima, Japan, where the ideal climate, rich volcanic soil and abundant hot springs nurture the tea bushes, giving the tea a deep, rich flavor.

SINCHA or SENCHA? Japan, like most other tea producing countries, embraces the first tea plucking of the new year as a special harvest that only produces a very limited quantity. Depending on the grower and the country, these early harvests are kept for government officials for "tribute tea" as part of the payment for the use of the land or they are presold to local tea houses which means that these teas virtually never leave the country of origin.

"Sincha" (In Japanese shin = new, cha = tea) is the earliest plucking of the tea bushes and precedes the larger harvests of first-flush sencha teas which follows. Tea designated as "Sencha" only is the beginning of the spring harvest after the first-flush. The earliest harvests command a pricing premium as the tea flavor profile deepens once the harvests get into late spring and early summer.

Zen Tara Premium Sencha is from the harvest just after the first-flush plucking. Given the dollar-yen exchange rate, we try and moderate the best quality Sencha available at a reasonable price for our customers. Our tea is vacuum packed in Japan to retain freshness. We recommend that Sencha tea is used within 3-4 months of opening in order to enjoy the full flavor of this tea. We do have access to an organic first-flush Sencha on a special order basis. PREPARATION: Allow water (filtered if possible) that has been brought to a boil to cool down to 170°F and add one full teaspoon tea leaves per 8 ounce cup. Infuse for 2–3 minutes. The same leaves can be infused a second and even a third time. Reduce the infusion time with each successive infusion.
