Green loose leaf tea as we know it has been produced in China for at least 900 years dating from the time of the Song Dynasty in the 12th century. In many countries around the world it is unquestionably the preferred type of tea. "Green" tea as a category really isn't very helpful in distinguishing a wide range of teas which are green teas due to the way they are processed after harvesting. Just as "red" wine is a generalization that doesn't account for specific varietals that are best produced in certain wine growing regions, specific types of green teas have been cultivated for centuries in certain areas under optimum growing conditions and with specialized processing skills specific for the tea type.
The two largest subcategories of green tea are those grown in China versus green teas from Japan. The Chinese green teas are withered and sometimes fired before drying and use a variety of steps in the processing to create everything from sword-shaped Dragon Well loose tea to the famous hand-rolled Jasmine Pearls and Gunpowder green teas.
The most famous green teas from Japan - Sencha, Bancha, Kukicha and Genmiacha incorporate a steaming process into their production. This processing along with specialized growing techniques bring out a golden-green color in the tea and a grassy flavor note that is distinctive to many Japanese green teas.
Outside of green teas historically grown in China and Japan with their own distinct tea "terroir" there are many green teas grown in a variety of tea growing countries augmented by more recent blends of green teas flavored with floral and fruit ingredients. Choose the green tea that appeals to you, keep an eye on the brewing time and temperature, and enjoy the full spectrum of flavorful, healthy green teas.
