Genmaicha is a Japanese green tea that combines late season Sencha tea harvests with roasted rice into a tea blend that brings together the light, grassy vegetal flavor of the green tea with a warm nutty roasted rice note. The tea has a unique flavor and aroma that some people find to be similar to barley teas that are also very popular in Japan. This mellow green tea is a perfect afternoon or evening tea and compliments chicken and seafood dishes well. A great change of pace green tea.
The blending of green tea with roasted rice was originally more of a case of necessity being the mother of invention rather than a culinary creation of a tea for a desired taste preference. During a year when tea harvests were poor, and the amount of tea available was scarce, it became common practice to add roasted rice as a filler to extend the limited tea quantities. Eventually, Genmaicha became popular in it's own right and continued to be produced even in times of bountiful tea harvests.
Heat water (filtered if possible) to a low boil and allow to cool slightly to around 180˚-185˚F. Add one rounded teaspoon of loose leaf tea per cup (apprx. 8 ounces). Infuse the tea leaves for 2–3 minutes depending on taste preference. Can be infused a second time.
