The flavor of chrysanthemum blossom tea has a light sweetness, and a pleasant aroma similar to golden honey. Chrysanthemum when brewed as a tea is not and overpowering floral like sometimes can be the case with jasmine or rose. Although caffeine-free, Chrysanthemum tea is traditionally felt to be able to revitalize our energy and refresh the mind and a cooling effect on the body.
In Chinese medicine, chrysanthemum is used to maintain healthy cholesterol levels, normalize blood pressure and improve blood flow. It is also used to sharpen hearing and vision, to calm the nerves and clear the brain. It has been proven to be of value in preventing sore throat and reducing fever. For all of its attributes, the Chinese consider chrysanthemum to be a longevity elixir.* In China, Chryanthemum flowers are one of the four ‘honorable plants’ along with bamboo, orchid and plum.
Start with cold (filtered, if possible) water and heat to a low boil or let cool to 195 degrees and add one generous teaspoon (apprx. 4 blossoms) per cup (apprx. 8 ounces). Infuse the tea for 2–3 minutes depending on taste preference. Sweeten if desired. May be infused a second time.
